As if you needed one more reason to love your air fryer, did you know you can use it to satisfy your cookie craving in under 10 minutes? If you’re anything like me, that’s a craving that hits frequently ;). However, I don’t always feel like making an entire batch. Thus we have this EASY recipe to make a big, soft & chewy single serving cookie in the air fryer.

Once you try this cookie, you might never go back to making full batches. In truth, you’ll hardly be able to believe it’s gluten-free — it’s that soft, chewy, decadent and filled with melted chocolate chips. Moreover, I was quite surprised that the taste and texture reminds me a lot of the famous Levain cookie. Now, here is how to make it.

Ingredients

  • 1 tablespoon unsalted butter, melted
  • 1 tablespoon brown sugar
  • 2 teaspoons granulated sugar
  • 1 egg yolk
  • 1/4 teaspoon vanilla extract
  • 1/4 cup + 1 teaspoon gluten-free flour*
  • 1/4 teaspoon baking powder
  • pinch of salt
  • 2 tablespoons chocolate chips
  • 1 tablespoon crushed walnuts (optional)

Instructions

  1. Preheat air fryer to 325 degrees for at least 5 minutes, using the “bake” setting (if applicable)
  2. In a bowl whisk together butter and sugars, then whisk in egg and vanilla until combined well
  3. Mix in flour, baking powder and salt to form a dough, then fold in chocolate chips
  4. Roll dough into ball, then flatten into cookie shape
  5. Place cookie on top of a piece of greased aluminum foil, then put into air fryer. Air fry for 5-6 minutes**
  6. Let cool for at least 5 minutes

Notes

* 1:1 gluten-free flour works best. I used King Arthur

** Air fryers can vary, so be sure to keep an eye on your cookie as it may take more or less time. I use the Ninja air fryer, which has a “bake” setting that I find works well for this recipe

Also make sure your air fryer is safe to use aluminum foil. I prefer using it over parchment paper, which I find burns easily in my air fryer

You can also bake at 350 degrees for 12-14 minutes

What air fryer do you use?

This is the Ninja air fryer I used, which I love because it has so many settings. When it comes to the Air Fryer cookie, I used the “bake” setting (on 325 degrees). Additionally, I let it preheat for about 5 minutes.

I had to experimenta few times to get the air fry settings right, so depending on the air fryer you use you may need to do the same.

I don’t have an air fryer. Can I bake this?

Yes! Bake at 350 degrees for 12-14 minutes.

Can I use a different flour?

If gluten-free, I recommend using a 1:1 gluten-free flour. I used King Arthur, which worked great. My other favorite 1:1 gluten-free flours are Pillsbury and Bob’s Red Mill.

All-purpose flour or oat flour should work as well, however I have not tried this recipe with them yet.

I tried this recipe 4 times using almond flour, and although it tasted delicious, it wasn’t holding together all that well.

I would not recommend using coconut flour as it has a very different absorbency and texture, and would alter all of the other ingredients.

Can I make this cookie dairy-free?

Yes! Simply use your favorite dairy-free butter or coconut oil instead of butter, and use dairy-free chocolate chips.

Can I make this cookie vegan?

In addition to the dairy-free swaps above, you could try using a flax egg instead of egg yolk, however I have not tried this yet.

Is it safe to use aluminum foil in the air fryer?

Make sure your air fryer is safe to use aluminum foil. I prefer using it over parchment paper, which I find burns easily in my air fryer. If you are not comfortable using foil you can place it directly in your air fryer, however it may stick/be more difficult to remove.
